Fruit Parfait (gluten/refined sugar free)

Looking for a last minute 4th of July dish?  This fruit parfait can be used as a dessert or side.  You can dress it up or down depending on the cup/bowl that you serve it in.  It is a fan favorite wherever I bring it and it always gets a compliment!  There is cream cheese in it.  Need I to say more?

Cream Cheese Mixture

  • 2 cups heavy whipping cream
  • 6 oz. cream cheese, softened–NOT melted
  • 1/4 cup maple syrup
  • 3 Tbsp lemon juice
  • 1 Tbsp GF vanilla

Granola

  • 2 cups steel cut oats
  • 1 cup sliced or slivered almonds
  • 1/2 cup melted butter
  • 1/4 cup maple syrup
  • 1 Tbsp vanilla
  • Fruit of your choice

Mix heavy whipping cream with hand held electric mixer until cream is very stiff.  Set aside.  Mix together the rest of cream cheese mixture.  Fold whipping cream into cream cheese mixture.  Consistency should be very smooth.  Mix all granola ingredients together in separate bowl.  Layer cream cheese mixture, granola, and fruit (twice) in a bowl or cups. Enjoy and have a Happy 4th of July!
